I'm looking out my home office window at the beautiful blue sky. The sun is shining down on the yellow patches of field turning them golden and the patches of snow, well they're just there to remind me that I live farther from the equator than I would like.
I haven't posted like I was planning to. I have a bad habit of not following through with plans or goals and it doesn't leave a person feeling very confident when we continuely let ourselves down. But here I am. Back and ready to give it another go.
Today I've got a really good 'recipe' for you. It's not much of a recipe really. You can change it and tweak it all kinds of ways and I'm sure it would turn out great, maybe even better! But this one is my favorite combination of all the lacto fermented vegetables I've tried so far. My absolute favorite way to eat them is sourdough toast, smashed avocado, fermented veggies and lots of fresh dill. Such a good breakfast with a couple eggs on the side! I handed in my notice last week. I've worked for the same company for 9 years and decided to call it quits. I've wanted to do it for a long time but couldn't summon up the courage to give up the stability that the job offered until now. My job felt like a crutch for the last year, something I didn't know how to live without but at the same time felt like it was weighing me down ever. single. day. And you know what? You can't run when you're holding onto a crutch for dear life. So here is to embracing a new season in life, no matter how scary it seems. Who knows, maybe I'll have more time to post consistently like I had promised myself earlier this year.
